Recipe

Fragrant Kissan Basmati Biryani

  • 2 cups Kissan Basmati Rice
  • 1 lb (450g) chicken, cut into pieces or your choice of protein
  • 2 large onions, thinly sliced
  • 1/2 cup plain yogurt
  • 1/4 cup cooking oil or ghee
  • 2 tomatoes, chopped
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped coriander leaves
  • 4 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon saffron strands soaked in 2 tablespoons warm milk
  • Salt to taste
  • 2 cups water for cooking rice

For Rice:

  1. Rinse 2 cups of Kissan Basmati Rice thoroughly under cold water until the water runs clear.
  2. Soak the rice in water for 30 minutes. Drain the water.
  3. In a large pot, bring 2 cups of water to a boil. Add a pinch of salt and the soaked rice. Cook until the rice is 70-80% done. Drain the water and set aside.

For Biryani:

  1. In a deep pan, heat oil or ghee over medium heat. Add cumin seeds and let them splutter.
  2. Add sliced onions and sauté until golden brown. Reserve a handful of fried onions for garnishing.
  3. Add ginger-garlic paste and chopped green chilies. Sauté for 1-2 minutes until the raw smell disappears.
  4. Add chopped tomatoes and cook until they become soft and the oil starts to separate.
  5. Add chicken pieces, turmeric powder, red chili powder, and salt. Cook until the chicken is browned and cooked through.
  6. Lower the heat and stir in yogurt, garam masala, chopped mint, and chopped coriander leaves. Cook for an additional 5 minutes.
  7. In a separate pan, layer half of the partially cooked rice over the chicken mixture.
  8. Sprinkle half of the saffron-infused milk and half of the reserved fried onions on top of the rice.
  9. Repeat the process with the remaining rice, saffron milk, and fried onions.
  10. Cover the pan with a tight-fitting lid and cook on low heat for 15-20 minutes, allowing the flavors to meld and the rice to finish cooking.

Gently fluff the biryani with a fork, ensuring the layers remain intact. Garnish with additional fresh mint and coriander leaves. Serve hot with raita or a side salad for a complete and aromatic culinary experience.
